
Pairing La Paloma Merlot
+ Beef Bolognese
INGREDIENTS
- 5 cloves of garlic
- 1 large onion
- 2 carrots
- 2 celery stalks
- 5 cloves of garlic
- 2 tablespoons salt
- 1/2 tablespoon pepper
- 12oz. pancetta
- (1) 8oz can of tomato poaste
- 2.5 lbs lean ground beef
- 1 bay leaf
- 28 oz. San Marzano tomatoes
- Hearty Italian wine
- 4 cups of beef stock
- 1 package of your favorite pasta

INSTRUCTIONS
Start by chopping 1 large onion, a couple of carrots, some celery ribs and 5 cloves of garlic. Throw it in a food processor until it’s finely pureed. Sautée it in a pan with a splash of olive oil and add 2 tablespoons of salt and 1/2 tablespoon of pepper. Let the flavors meld together for 15 minutes on medium heat. Add in a 12 oz. package of pancetta. Trader Joe’s pancetta for the win for this recipe. Add an 8 oz. can of tomato paste and simmer for 10 minutes.
Next, add 2.5 pounds of lean ground beef and cook until the meat is browned. Add 2 tablespoons of Italian Seasoning, a bay leaf and a 28 oz. can of San Marzano tomatoes. After having a glass, add in half a bottle of a hearty Italian wine. Let everything simmer for 20 minutes. Finally, to offset any bitterness, toss in 1 tablespoon of sugar and simmer for 1-2 hours (adding in beef broth/stock as it cooks down).
Cook that with your favorite pasta. I like pappardelle pasta as it really absorbs the sauce. Top it with freshly grated Parmigiano Reggiano. If you like a little kick toss in a few red chili flakes..
